No-Bake Raspberry Tiramisu Recipe: Easy Speculoos Dessert

Made with layers of luscious mascarpone, naturally sweet agave syrup, and vibrant raspberries, it’s the perfect twist on the classic Italian treat without the coffee or cocoa!

Whether you’re hosting brunch or need a quick dessert to impress, this recipe is light, fruity, and incredibly satisfying.

Mascarpone cheese250 g
Agave syrup50 g
Vanilla powder1 teaspoon

Fresh raspberries200 g

Instructions:

  1. Prepare the Speculoos Base:
    • Place the speculoos biscuits in a food processor and pulse until they form fine crumbs
    • Divide the crumbs evenly among six serving glasses or bowls, pressing them down gently to form a base layer.​
  2. Prepare the Mascarpone Cream:
    • In a mixing bowl, whisk the egg yolks with the agave syrup and vanilla powder until the mixture becomes pale and slightly frothy.​
    • Add the mascarpone cheese to the egg yolk mixture and blend until smooth and well combined.​
  3. Whip the Egg Whites:
    • In a separate clean bowl, add a pinch of salt to the egg whites.​
    • Whip the egg whites until stiff peaks form.​
  4. Combine Mixtures:
    • Gently fold the whipped egg whites into the mascarpone mixture, ensuring you maintain the airy texture.​
  5. Assemble the Tiramisu:
    • Spoon a layer of the mascarpone cream over the speculoos base in each glass.​
    • Add a layer of fresh raspberries on top of the cream.​
    • Repeat the layers, finishing with a layer of mascarpone cream.​
  6. Chill:
    • Cover the glasses with plastic wrap and refrigerate for at least 3 hours to allow the flavors to meld and the dessert to set.​
  7. Garnish and Serve:
    • Before serving, garnish each tiramisu with a few fresh mint leaves.​
    • Optionally, add a couple of raspberries on top for decoration.
